       HAMS & BACON


Our Bacon is cured on the farm using the traditional method of dry salting, the method used by the Dobson family for generations. Resulting in a distinctive taste and a firm meaty texture. Our bacon will have more fat than some of the very lean bacon available. This is partly due to the characteristics of the breeds we use and the natural free-range conditions in which the pigs are kept.
Minimum weight on orders 500g.

HAMS

William Cobbett, author of the classic 19th century book, “Provident Cottages” required his great sides of bacon to last for many months. It had to; it was the only major source of protein for the whole family during the winter months.  Nowadays we can lay on the salt with a lighter hand, but not so lightly as the factory with rapid cures by injection of brine.  Home cured hams will therefore require soaking to remove any excess salt.  All hams are uncooked. Cooked Whole Hams available, please contact us to discuss your requirements.

WILD BLACK BOAR

Wild Black Boar is unique to The Parsons Nose, taking its name from the colour of its hairy coat. The very distinctive Wild Black Boar has a taste of their very own. The butchery team will endeavour to cut your meat to as near the weight you requested as possible
