WILD BOAR AND GLOUCESTER OLD SPOT HAMS
William Cobbett, author of the classic 19th century book, “Provident Cottages” required his great sides of bacon to last for many months. It had to; it was the only major source of protein for the whole family during the winter months. Nowadays we can lay on the salt with a lighter hand, but not so lightly as the factory with rapid cures by injection of brine. Home cured hams will therefore require soaking to remove any excess salt. All hams are uncooked. Cooked Whole Hams available, please contact us to discuss your requirements. |
