Venison Wellington


A festive twist on the British classic. A juicy, tender venison fillet steak sourced from The Forest of Dean, topped with rich mushroom duxelles, wrapped in home cured bacon then encased in delicious, crumbly puff pastry. Simple to cook but guaranteed to impress. . This wellington is perfect for festive dinners, boasting rich and well-developed flavour.  Serve alongside redcurrant jelly and a rich red wine sauce.

Please note this Vegetarian Wellington will arrive partially defrosted, so it will need to be put into the fridge overnight to fully defrost.Remove all packaging, ensure thoroughly defrosted. Preheat Oven. Place on a baking tray in the centre of oven for 18 20 minutes at 200 oC/ Fan 180 oC / Gas Mark 6. Shelf life 3 days.

    Venison loin, pastry: (wheat flour (gluten), yeast extract), vegetable oils, water, wheat starch (gluten), lemon juice, salt, preservative: (alcool), duxelle: portobello/chestnut mushroom, shallots, madeira (sulphites), unsalted butter (milk), garlic,  sea salt, fresh thyme, cracked pepper), ham: pork, salt, dextrose, antioxidant: (sodium Ascorbate), preservative: (potassium Nitrate)), glaze: (egg yolk, milk, sunflower oil, salt).
